About Course & Exam Session

The Evanston, IL NEHA® Professional Food Manager Instructor-Led Remote Course prepares those working in the food and beverage industries with the knowledge needed to pass the ANSI/CFP-approved Certified Professional Food Manager exam. It provides culinary and hospitality professionals and students with the knowledge they need to ensure the successful execution of best food safety practices in the workplace. The course aligns with the American Culinary Federation Education Foundation (ACFEF) Required Knowledge and Skills Competencies for Sanitation standards. It is designed as a study course to prepare individuals to take the ANSI/CFP exam for certification as a Food Protection Manager.

Livestream Requirements

  • You will need a webcam & microphone for the Instructor-Led remote courses on a computer or tablet to participate in the course.  Test Equipment before connecting to the Remote Course – TEST LINK.
  • For the best connection have your device connected directly to the internet router.

 

Course Duration & Topics The course consists of ten chapters, a pre-and post-test, and knowledge checks in each chapter. The entire course is designed to take 7 hours to complete, depending on the amount of review, familiarity with the content, and internet connection.

Evaluation Process Intended learning outcomes are measured by the course assessment. After completing the pre/post evaluations, course content, and course assessment, you will be prepared to take your exam. Course completion does not mean you have your certificate yet! You must take the certified exam through an ANSI/CFP-approved exam provider to become certified.

Regulatory Requirements

As stated in the 2022 FDA Food Code – Section 2-102.12: The Person In Charge (PIC) shall be the Certified Food Protection Manager. Must be on duty at all times that food & beverage is being prepared and served. Please review local regulatory requirements for what is required in your area – ServSafe® Regulatory Map.

ANSI/CFP Exam

  • HRUniversal has co-branded the Certified Food Protection Manager Exam with Responsible Training / Safeway Certifications, LLC.  The Responsible Training & ANSI logo is displayed with all certificates verifiable at ResponsibleTraining.com.
  • The exam is administered electronically only in person with an approved proctor or with a Remote/Virtual Proctor with Examity.com. The Food Protection Manager Certification Program consists of a 75-question multiple choice exam, which you must pass with 70% to be awarded a food manager certificate.
  • This Certified Food Protection Manager Exam will assess your knowledge and understanding in:
    • Highly Susceptible Populations and FDA Food Code Terminology – 6%
    • Foodborne Illness – 8%
    • Health Inspections and Facility Maintenance – 5%
    • Food Management Responsibilities – 8%
    • Food Controls – 25%
    • Proper Cleaning and Sanitizing Measures for Food Equipment – 17%
    • Employee Hygiene – 6%
    • Hazard Analysis and Critical Control Points (HACCP) – 19%
    • Proper Use of Chemicals and Pest Control – 6%
  • If the participant fails the Certified Food Protection Manager Exam the first time they may retake the exam a second time for free the same day but must complete it during the original exam time or at the next course/exam session held in the area held by HRBUniversal.  If the participants want a full two hours to retest on the same day they will be charged a proctor fee of $50.00 which must be paid before the second exam is administered.  Re-Test must be taken in the same format as the first exam was administered.

All registrations will receive a confirmation email with downloadable training materials, a mobile app invitation, and the URL of the Livestream. If you would like a copy of the current NEHA® Professional Food Manager, Sixth Edition Book you may purchase it at an added cost – NEHA® Professional Food Manager, Sixth Edition. HRBUniversal does not require the book to attend the Instructor-Led Remote Course but strongly suggests you have a copy to prepare for the exam.
